It’s a GoldRush!

There’s a GoldRush coming to town, and it’s in the form of hard cider!

A growing trend in the modern hard cider movement is single variety ciders. Much like many well known wines crafted from single grape varietals, cider makers are aiming to craft ciders based on individual apples, instead of the traditional blend of sweet and tart apples. Think Pinot Grigio, Chardonnay, or Riesling wines. Consumers understand what those wines might present in terms of a flavor profile. The goal is to elevate cider and cider-specific apples to such a place.

GoldRush is an apple cultivar developed by Purdue Univeristy in the 1970’s, relatively recent in terms of apple production. It has a great balance of sugar and acid, which is needed for a balanced cider. As an apple, it is also incredibly firm, with a crunchy tart bite during fall harvest. It’s a great storing apple, that mellows with age, and turns into a slightly softer and sweeter apple after keeping through the winter. As a hard cider, it is white wine like, with subtle tropical and saline notes. It’s our first take at a single varietal cider, a trend we expect to see and craft more of in the near future!
